After making my chocolate peanut butter homemade Larabars recipe, I thought I’d have some fun and try different flavors. I looked to see what I had in my cabinets and came up with some raw almonds and some coconut.
Score.
Sounds yummy to me.
So we tried it.

These are so easy to make, they don’t require any baking, and only use as few or as many ingredients as you want. They are sweetened with dates so there is NO SUGAR added. They taste great, make a healthy snack and have absolutely no chemicals or preservatives. You can form them into any shape or size you want from bars to squares to balls.
We went for the squares this time.

They taste fantastic. So fresh and real, much better than the store-bought. They are a bit stickier but it’s a small price to pay for better taste. The only problem with these is that I CAN’T STOP EATING THEM.
- 1-1/3 cup pitted Medjool dates
- 1 cup raw almonds
- 1 tsp vanilla extract
- ¼ cup coconut
- ⅛ tsp salt (optional)
- Combine dates, almonds, vanilla, coconut and salt in a food processor and puree until combined and sticking together.
- If the mixture seems a bit too dry, add water and continue to puree. You probably won’t need it.
- Remove mixture from bowl and for bar shaped pieces, press it down onto a cutting board and form into a square or rectangle. Cut into 10-12 square or bar shaped pieces.
- Chill until eaten.

So simple! If I wasn’t making so many sweets I would make these this week but man, I am almost tired of eating sweets. These will be perfect for my little guy.
I’ve never had a lara bar either but I love dates so I’ll have to try this!
