There are two things I try to do with my diet and food choices. The first thing I do is I try to eat low-fat, high protein whenever possible. The second thing I do is I try to make my food rather than buy it pre-made. Soup is a perfect example.
There are a ton of recipes online for rich and creamy tomato soup, but most of them contain high fat ingredients such as heavy cream and a simple bowl of soup ends up being a high fat, and therefore high Weight Watchers PointsPlus values, meal.
So I improvised.
And came up with my own recipe.
And it’s good.

Weight Watchers friendly tomato soup recipe
I consider this recipe 1 serving. It makes 2 small bowls or 1 big bowl. I eat the whole thing for lunch and it is quite filling.
Ingredients:
- 1 – 15 oz can of tomato sauce (I prefer Hunts all natural)
- 1/2 cup fat-free dairy creamer (you can use whole milk but it’s not quite as rich but the PointsPlus values I believe end up the same)
- 1/2 tablespoon basil
- 1/8 teaspoon onion powder
- 1/8 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1 tablespoon margarine (optional)
- croutons (optional)
Directions:
Combine tomato sauce, fat free creamer and margarine (optional) in a saucepan. Stir together and set on low heat. Add in basil, onion powder, black pepper and garlic powder. Depending upon your tastes, you might want to add more of the seasonings. Sometimes I add oregano and chili powder too if I want a kick. Heat on low, stirring frequently, for about 10 minutes.
Top with croutons (optional) and enjoy.
Weight Watchers PointsPlus values (according to MY calculations, always check for yourself):
1/2 cup fat-free dairy creamer: 3 pts
1 can tomato sauce: 0 pts
1 tablespoon margarine: 2 pts
Total PointsPlus with margarine: 5 pts
Total PointsPlus without margarine: 3 pts
The soup tastes a bit better with the margarine, but frankly I usually save the points and leave the margarine out.
I like to add croutons to my tomato soup. They give it more texture and make it more filling and tasty. My favorite croutons are the Texas Toast Cheese and Garlic. If you add croutons, 1 servings (2 tablespoons) is roughly 1 pt.
