American Express Blue Cash Super Bowl Showdown Event
The Super Bowl is a big deal in this country.
Whether you are a football fan or not, or whether your team made it to the big game or not, it seems a lot of people do something fun on game day and that fun usually involves awesome food.
I think in many cases, especially when their favorite team didn’t make it, the food is the entire reason people bother to even watch – it’s almost an excuse to pig out on tasty appetizers and yummy goodies.
In my house, my boys love their football, in fact just today my husband recorded an OLD Super Bowl on the NFL Network because my son wanted to watch it. Every morning my son watches what I call the “football news” and he is completely up-to-date on the who’s who and what’s what going on in football today. He’s sort of a football nerd.
Personally I don’t pay much attention to football, but I love the idea of creating a great Super Bowl spread that we can enjoy while they watch the game (and I play Words With Friends on my iPad). And with my new-found focus on organic foods, I think it would be a great challenge to make a 100% organic spread for game day.
To start with I found this yummy sounding recipe from Taste of Home for Creamy Buffalo Chicken Dip and I am going to try and make a healthier, organic version.
Here is their original recipe:

- 1 package (8 ounces) cream cheese, softened
- 1 cup Louisiana-style hot sauce
- 1 cup ranch salad dressing
- 3 cans (4-1/2 ounces each) chunk white chicken, drained and shredded
- 1 cup (4 ounces) shredded cheddar cheese
- Corn or tortilla chips
- Thinly sliced green onions, optional
- In a small bowl, combine the cream cheese, hot pepper sauce and salad dressing. Stir in chicken.
- Spread into an ungreased 11-in. x 7-in. baking dish. Sprinkle with cheddar cheese. Bake, uncovered, at 350° for 20-22 minutes or until heated through. Sprinkle with green onions if desired. Serve with chips. Yield: 5 cups.
