Clean Eating Oatmeal Chocolate Chip Cookies

Just because we eat clean and organic does mean we don’t want yummy stuff like cookies and cakes all sorts of yummy goodies.  The thing is, we just have to work a little bit harder to get them because we have to make them from scratch using ingredients that aren’t always as predictable as all-purpose flour and sugar are.

But when you do find a good recipe, they have that same can’t-stop-eating-them effect as any traditional baked goodies do.

The following is a recipe I adapted for clean eating oatmeal chocolate chip cookies and neither myself or my kids could get enough of them.  They went fast!

Clean Eating Oatmeal Chocolate Chip Cookies

Serves: 16-24
Ingredients
  • 1¼ cups old fashioned oats (instant will make the cookies a bit softer, I prefer traditional)
  • ½ cup white, whole-wheat flour
  • ½ tsp ground cinnamon
  • ½ tsp baking powder
  • ½ cup raw honey
  • 1 egg
  • ¼ tsp sea salt
  • 1 tsp vanilla
  • ¼ cup chocolate chips (I used organic)
  • 2 tsp butter
  • ¼ cup shredded coconut (optional)
Instructions
  1. Preheat oven to 350 degrees.
  2. Line a cookie sheet with parchment paper or spray with oil.
  3. Mix all dry ingredients together in a large bowl.
  4. Mix wet ingredients together in a small bowl.
  5. Add wet ingredients to dry ingredients and blend until combined.
  6. Drop 1 tbsp servings onto the cookie sheet leaving about 1 inch between. Flatten to create circles.
  7. Bake 8-10 minutes until golden brown.
  8. Allow to cool on baking sheet for 4-5 minutes, then transfer to rack to cool completely.
Notes
This is a great recipe to add some fruit purees to such as pumpkin or banana or even some veggie purees such as zucchini or butternut squash. Add ¼-1/2 cup of puree to recipe if desired. You could also replace the chocolate chips with raisins.

    I baked the cookies exactly how the recipe states to bake them. I just added pecans. They were delicious!! This will be my new chocolate chip cookie recipe!

    These cookies are great and super fast to make. I only got a dozen out of the recipe which is ok because you really don’t need lots of these left over. Thanks for sharing this with all of us!

    One concern, not sure why but mine don’t seem to want to stay together. Maybe because I had to use instant oats. They still taste delicious and it won’t stop me from making them again.

    Yeah it seems like a lo of honey. I added more flour to thicken up the batter and lighten the sweetness of the honey. Any idea on the calroies for these?

    Hmmmmm…… I made the cookies and they are really great and delicious. But I only 1 Tbls. Honey and 1 Banana, and they are great, thanks for the recipe ;)
