Toasted Coconut & Fig Almond Milk Smoothie

This smoothie is thick and rich and is the perfect start to a busy day. It is chock full of protein and fiber and will fuel your day. If you don’t have time to mix up a smoothie, the vanilla flavored Silk Almondmilk Protein + Fiber® tastes great! I love to add it to my coffee and my son enjoys it straight up.

Toasted Coconut & Fig Almond Milk Breakfast Smoothie

Ingredients
  • ⅓ cup dried figs with stems removed (about 5)
  • 2 frozen bananas
  • 2 tbsp cacao powder
  • 1 tbsp raw honey (optional)
  • 1 tbsp almond butter
  • ½ tsp vanilla
  • 2 cup almond milk (I used Silk Vanilla Protein + Fiber Almondmilk®)
  • ½ cup coconut (plus extra for garnish)
Instructions
Toast coconut
  1. Heat oven to 300 degrees
  2. Spread finely shredded coconut on a baking sheet
  3. Toast, stirring frequently until lightly golden brown (about 5 minutes)
Make smoothie
  1. Add frozen bananas, figs, cacao powder, honey, almond butter, vanilla and almond milk to blender (I use a Vitamix but any blender should work).
  2. Blend until smooth.
  3. Add in toasted coconut and mix until thoroughly blended.
  4. Serve topped with toasted coconut.
Notes
This made 3 very thick smoothies. You could still drink through a straw, but you could easily add more almond milk to thin them out and increase the servings.

If you don't have figs, you could use pitted dates as well.

    Not usually a fan of almond milk but this looks good!

    This looks really good and I love Silk Almond products. My youngest has a milk sensitivity, so he has the Vanilla for breakfast.

      I love the vanilla! I usually get the unsweetened vanilla, my son drinks that one plain too.

    This smoothie sounds delicious. I love figs and almonds. The addition of the toasted coconut just takes it over the top.

    We make a lot of fruit smoothies with greens, but I don’t usually add milk/Silk to it. This recipe will be a new change for us.

    This looks so good! I need to give Silk a try for myself because I’ve developed a milk intolerance as well. Next time I come over you need to make me one of these smoothies!

      It’s really great – Silk and the smoothie. I don’t get bloated anymore from adding milk to my coffee.

    Is it bad that all I can think is ‘I want those glasses?!’

    I don’t know if I’d drink SILK, but I haven’t tried it. I do like that they have the blends now.
